This is our third year buying washed Blue Ayarza, “Vinoso” from Guatemala. We’ve always been impressed by the clarity and consistency of this coffee. “Vinoso” gets its name as the coffee is harvested quite a distance away from the processing mill. Therefore the beans sit in cherries for quite a long time with the result that the fruit is absorbed to give a “winey” flavours.
